JP Anglo: The Visionary Chef Bringing Filipino Flavors to Global Tables

Chef JP Anglo isn’t just serving food—he’s serving culture, memories, and a whole lot of soul. From the lively kitchens of Sarsa in Manila to the heartfelt bowls of sinigang at Kooya in Dubai, JP is on a mission to make Filipino cuisine a global phenomenon.

And he’s doing it with an infectious passion that blends tradition, innovation, and an adventurous spirit.

From Bacolod to the World Stage

Born in Bacolod, a region rich in culinary heritage, JP Anglo’s journey to becoming one of the most celebrated Filipino chefs wasn’t without its challenges. He cut his teeth at Le Cordon Bleu and faced early hurdles in Manila’s competitive dining scene.

But with sheer grit and an unshakable vision, JP established iconic restaurants like Sarsa, Kafé Batwan, and Liberation Shawarma—each one a love letter to Filipino flavors.

His dishes are more than just food; they’re storytelling on a plate. Take Sarsa’s 3-Way Sisig, a tribute to Pampanga’s wet sisig, Manila’s crunchy version, and the Cordilleras’ smoked meat techniques.

It’s this attention to detail that made Anthony Bourdain a fan, with JP famously zipping through Manila traffic to serve the legendary chef his take on isaw.

Taking Filipino Food to Global Heights

JP’s influence doesn’t stop at Philippine shores. His restaurant in Dubai, Kooya Filipino Eatery, has become a haven for Filipinos craving a taste of home and a springboard for introducing Filipino cuisine to the world. “Dubai is a gateway to global recognition,” JP says.

“Seeing non-Filipinos line up for sinigang or adobo reminds me why I do this.”

Whether it’s collaborating with international chefs, speaking at global food events, or vlogging about his adventures, JP’s mission is clear: to elevate Filipino food while staying true to its roots. His heartfelt approach was evident during a pop-up in Dubai, where a bowl of sinigang brought a diner to tears.

“That’s when I realized I’m not cooking for my ego,” JP reflects. “I’m cooking for my people.”

A Chef with Heart, a Leader with Vision

Beyond the kitchen, JP’s leadership style is shaped by family values and a commitment to growth. Now a father, he’s learning to balance his time between his restaurants, family, and his passion for surfing and travel.

His vlogs, often showcasing his adventures and experiments with Filipino ingredients, have garnered a loyal following, proving that food is as much about connection as it is about flavor.

JP’s philosophy is simple yet profound: “Filipino food deserves the spotlight, but it’s not about our egos. It’s about pulling each other up so our cuisine can rise together.” With this mindset, JP Anglo isn’t just a chef—he’s a cultural ambassador, bringing the richness of Filipino flavors to global tables one dish at a time.
