Michelin-recognized Vietnamese restaurant The Lunch Lady is set to open its first Philippine location in Bonifacio Global City on Oct. 29, following its success in Canada, where its restaurants in Vancouver and Toronto earned Michelin Bib Gourmand distinctions. The expansion also marks a homecoming for Filipino chef Benedict Lim, the restaurant’s culinary director and co-owner.
The Lunch Lady received five consecutive Michelin Bib Gourmand distinctions in Vancouver from 2022 to 2026, while its Toronto restaurant earned the same recognition this year. Its Vancouver location also ranked ninth on Food & Wine’s 2026 list of Top International Restaurants, further establishing the restaurant’s international reputation before its Philippine debut.
The restaurant traces its beginnings to 1995, when Vietnamese cook Nguyễn Thị Thành opened a small noodle stall in Ho Chi Minh City, serving a different regional soup each day using recipes passed down through generations of her family. The stall gained international attention in 2009 after the late celebrity chef Anthony Bourdain featured it on his travel program No Reservations, introducing her cooking to audiences worldwide.
The concept eventually expanded to Canada after restaurateur Michael Tran met Thành in 2012 and developed a partnership to bring her traditional Vietnamese dishes to a wider market. Lim, who was personally mentored by Thành and restaurant co-founder Victoria Tran, helped develop the culinary program while preserving the recipes and cooking techniques that defined the original stall.
Following Thành’s death in May 2025, the restaurant’s culinary team continued carrying forward her traditional recipes, including its signature slow-prepared broths and rotating noodle soup menu.
For its Manila opening, The Lunch Lady will introduce separate lunch and dinner menus, combining traditional Vietnamese street food with contemporary preparations and locally sourced ingredients. Customers can expect signature dishes such as Wagyu Phở, Steak Lúc Lắc and Garlic Noodles, alongside a daily selection of noodle soups and dishes prepared using charcoal and live-fire cooking techniques.
“Bringing The Lunch Lady to Manila gives us an opportunity to explore parts of Vietnamese and Southeast Asian cooking that we haven’t been able to in the same way in North America,” Lim said.
The Philippine expansion is being led by co-founders Michael and Victoria Tran, together with Lim and local partner HTCG Premium Food Concepts Inc., headed by Annabelle Chua. Manila will become the third city outside Vietnam to host the restaurant concept, following Vancouver and Toronto, Canada.
The Lunch Lady Manila will officially open on Oct. 29 at 102 Forbestown Road, Bonifacio Global City, Taguig, bringing the restaurant’s internationally recognized Vietnamese cuisine to Philippine diners for the first time.
